Veggie packed Vegan Bolognese

30 Minutes Total!
This recipe is perfect for picky kids that won't eat their veggies, the vegan eater who doesn't prefer "meat" alternatives, or just anyone who wants to pack a good veggie punch in their diet!
Tools Needed (suggested, you use what you have that works similarly, or makes less of a mess!):
Cutting board and knife
Food processor
Tongs
Large pot
Frying pan
Bowl and spoon!
A leftover container because this makes A LOT
Ingredients:
9 Cap mushrooms
1 Shallot
1 red onion
Butternut squash
Any extra veggies you wish
Garlic (minced or fresh, we used pre minced)
Nutritional yeast (optional)
Salt and pepper
Tomato sauce, or canned tomato (we used a jar of red sauce to save time!)
Banza Spaghetti my personal favorite protein pasta, use one you might prefer! But don't skip on your protein!
Chao Shreds I love making a cheesy bolognese. Use a vegan cheese or vegan Parmesan if you prefer.

Steps:
Wash, cut (quarter your onion, and cut your butternut squash if you don't find pre-cut), prepare your veggies and throw them into the processor, add your garlic at this step!
DO NOT ADD OIL OR ANY MOISTURE TO THE PROCESSOR! You don't want to accidentally make a paste
Set your water to start boiling, season your water! I beg of you!
Work them until you get a nice crumble consistency, really make sure you don't see oddly larger pieces of any vegetable it'll ruin the illusion.
Pan fry the mixture with a cooking oil of your choice, we used avocado.
When the crumbles soften up and get a little brown, add your spices.
We used roughly a table spoon of Nutritional yeast, a teaspoon and a half of the Umami seasoning, and pepper
When your water boils, add your pasta, Banza is about 11 minutes of cook time
Add your tomato sauce, canned or home made, and let everything marry together while the pasta cooks.
When the pasta is ready, add the Chao cheese to the bolognese, grab about 1/3 cup of your pasta water, incorporate, and add your pasta.
Mix
Garnish and enjoy!
